They are super easy to make and the only thing you need to take into account is that the dough needs to be chilled for 2 hours before cutting the cookies.
100 g. Spelt flour (you can use regular flour too).
60 g. parmigiano reggiano cheese, grated (can also use gruyere, cheddar or provolone cheese).
40 g. coconut oil
1 egg yolk
1/4 cup of cold water
1 tablespoon dried oregano
1 teaspoon paprika
1/2 teaspoon garlic granules
Black pepper to taste
Half a cup of Semolina
1.- Place the flour in a bowl. Add the coconut oil, which needs to be in its solid state, if yours is soft when you are going to use it, place in the fridge until it becomes hard.
2.- Rub the flour and the coconut oil until you have a fine, sort of sandy texture.
3.- Add the oregano, pepper paprika, garlic granules and the cheese. Mix everything together.
4.- Make a well in the centre and add the egg yolk and water.
