As we are going on holidays tomorrow we are in the process of using up all the random bits of vegetables and fruit left so that we don’t have to throw them away or come back to a colony of fungi thriving in our fridge.
We bought quite a big watermelon a couple of days ago, and despite the high temperatures and the fact that we like watermelon, we haven’t been able to finish it. So, today was the day. We just juice it with the remaining cucumber and half a lime to cut a bit through the sweetness, add a bit of mint and …Voila! An amazing summer juice!
Full of electrolytes and goodness.
The only work involved is removing the seeds from the watermelon, but it only took me 5 minutes.
Ingredients (for about 500ml)
Half a lime
A quarter of a big cucumber
500 grs of watermelon, de-seeded.
A sprig of mint.
1.- Place mint, cucumber, lime and watermelon on juicer and Go!
Tastes sweet, only a bit tangy and because watermelon and cucumber are both quite watery, the flavours are not too strong. If you add 150 ml of water to the mix, you’ll end up with something that tastes like a flavoured water.
You can peel the cucumber to get an even pinkier juice; add some soda to make it fizzy or use one whole lemon instead of half a lime to make it a watermelon lemonade.
Have a great day! enjoy the sun!!
Ps. If you are looking for some other summer drinks, why not check out this refreshing Hungarian Lemonade (best lemonade I’ve had so far) or this amazing Strawberry-basil lemonade, both are guaranteed to fight the summer heat 🙂
